Healthy Quickie: Spanish Frittata
Going through my notebooks, and I have number of recipes I want to share with you once the stress of work is behind me, and more time for my favourite things in life—one of them is cooking and writing about food. Here’s one recipe I think is easy to do, and really won’t take too much of your time and you can eat it this or lunch or dinner. The trick to keep this one at a minimal time suck is to pre-cook the potatoes and roast tomatoes, and make batches of roasted tomatoes and freeze so that you can use them in recipes like this one or in salads or anitpasto
A frittata is a type of Italian omelette that has meat, cheese and vegetables. For vegetarians simply eliminate the meat, and for those who don’t like the taste of sausages you can substitute the sausage for fish of your choice.
Spanish Frittata
Ingredients
1 tsp butter
150 g Chorizo sausage
60 g baby spinach
210 g potatoes
150 g oven roasted tomatoes -- see recipe below (I prepared batches of these over the summer)
60 ml scallions
10 large eggs
4 tbsp heavy cream
1 tsp salt
½ tsp pepper
70 g goat cheese
Directions:
Pre-cook the potatoes and dice. Preheat oven to 375ºF. Preheat skillet. Butter a wide baking dish and set aside. Place diced Chorizo sausage into the skillet with a bit of oil and sauté them until they are crisp and golden brown. Place the spinach in the baking dish and top with potatoes. Using a slotted spoon, add the sausage on top of the potatoes. Top with roasted tomatoes and sliced scallions. In a bowl, whisk eggs with heavy cream and salt and pepper. Pour the mixture over the vegetables. Make sure the egg mixture is evenly distributed. If you decide to use less eggs it will give you a thinner frittata, which I don't recommend . Sprinckle the goat cheese on top. Add salt and pepper to the finish dish. Place the baking dish in the oven for 30-40 minutes or until there are no traces of raw egg when you pierce a knife in the middle of the dish.
Cut the frittata in wedges and serve with salad.
Oven Roasted Tomatoes
Ingredients
2pcs Roma tomatoes
1 tsp salt
½ tsp sugar
½ tsp dried thyme
½ tsp dried basil
½ tsp dried oregano
1 ½ tsp olive oil
Directions:
Set oven at 450ºF. Cut the tomatoes into wedges. Combine tomatoes with all ingredients in a large bowl, place on an oven tray and broil tomatoes for 15-20 minutes. Remove and freeze until use.
